Gazpacho with veggie pate toast

Ingredients

  • 1 carton of Alvalle Gazpacho Original
  • Rye bread
  • For the pâté:
  • 300 g of mushrooms
  • 1 clove garlic
  • Parsley
  • Coriander
  • Cashew nuts (1 handful)
  • Virgin olive oil
  • Salt
  • Half lemon

How to do it

Looking for a veggie side dish idea to enjoy our Gazpacho Alvalle? Nothing better than a home-made vegetable pâté full of flavour. It's easy and you can prepare it the day before so that, when you feel hungry, you just need to open a carton of our Gazpacho and enjoy the meal.
  1. Soak the cashews and set aside Stir fry the garlic with the parsley.
  2. Add the cut mushrooms, salt and pepper and cook.
  3. Once it is cooked, mix them with the juice of half a lemon and the already soaked cashews.
  4. Beat the mix until you get the right consistency.
  5. Lay the pâté on top of the rye bread and decorate it with coriander.
  6. Serve the Gazpacho Alvalle on the side: there you have a complete vegetarian menu!
